Mini Meatloaves

Total Time: 55 mins Preparation Time: 10 mins Cook Time: 45 mins

Ingredients

  • Servings: 3
  • 1 lb lean ground beef
  • 1/4 cup onion, finely chopped
  • 1/2 cup breadcrumbs
  • 1/4 cup ketchup
  • 1 tablespoon worcestershire sauce
  • 1 teaspoon salt
  • ketchup (extra)
  • 1/2 cup onion, chopped
  • 1 celery rib, chopped
  • 1 teaspoon olive oil
  • 1/2 cup ketchup
  • 2 tablespoons brown sugar
  • 2 tablespoons lemon juice
  • 2 tablespoons worcestershire sauce
  • 1/4 cup water

Recipe

  • 1 mix ground beef, onion, bread crumbs, ketchup, worcestershire sauce and salt.
  • 2 press beef mixture into a 6 cup muffin tin. spoon small amount of ketchup on top of each.
  • 3 place in a 350 degree oven and bake for 45 minutes. (while baking prepare sauce.) remove from muffin tin and place on serving plate.
  • 4 sauce: saute chopped onion and celery in olive oil in a small saucepan.
  • 5 add ketchup, brown sugar, lemon juice, worcestershire sauce and water. simmer for one minute. spoon sauce on tops of meatloaves. serve.
  • 6 enjoy!
