Lebanese Baked Eggplant

Ingredients

  • 2 eggplants
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • 1 pound beef stew meat, cut into small pieces
  • 1 large onion, chopped
  • 1 1/2 cups chopped walnuts
  • 2 large potatoes, cut into 1 inch cubes
  • 2 (14.5 ounce) cans stewed tomatoes
  • salt and pepper to taste

  • cut eggplants into half-inch slices; sprinkle with 1 teaspoon salt and let stand for 20 minutes; blot up the liquid with a paper towel.
  • preheat an oven to 350 degrees f (175 degrees c).
  • heat the olive oil in a skillet over medium heat; brown the onion and stew meat in the hot oil. stir in the walnuts and cook another 2 minutes; remove from heat.
  • arrange half of the eggplant slices in the bottom of a 9x13 inch baking dish; spoon the beef mixture over the layer of eggplant. top the beef mixture with the remaining eggplant slices, potatoes, and tomatoes; season with salt and pepper.

  • 1 pound ground beef
  • 1 onion, chopped

  • 1 tablespoon minced garlic
  • 1/4 cup shredded cheddar cheese

  • 1/2 cup packed brown sugar
  • 1/2 cup ketchup
  • 1 1/2 pounds lean ground beef
  • 3/4 cup milk
  • 2 eggs
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon ground black pepper
  • 1 small onion, chopped
  • 1/4 teaspoon ground ginger
  • 3/4 cup finely crushed saltine cracker crumbs

  • combine the ground beef with half of the minced garlic and a tablespoon of chopped onion. mix with your hands until fully incorporated. shape the meat mixture into 1 1/2-inch oblong patties; you should have 12 to 14 meatballs.
  • heat a skillet over medium-high heat. brown the patties in batches until they are crispy on both sides and are no longer pink in the center, about 10 minutes. set the meatballs aside in a rimmed serving dish and repeat with the remaining patties.
  • reduce the heat to medium and stir in the remaining chopped onion. add salt and pepper. cook the onions in the drippings, stirring constantly, until the onion has softened and turned translucent, about 5 minutes. stir in the remaining half of the garlic and cook for 30 seconds.

  • 1 pound ground beef
  • 1/2 cup diced green bell pepper
  • 1/2 cup diced red bell pepper
  • 1/4 cup diced red onion
  • 1 clove garlic, chopped
  • 1 (14.5 ounce) can italian-style diced tomatoes, drained
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 1/4 cups shredded sharp cheddar cheese

  • 1 1/2 pounds ground beef
  • 1/4 cup water
  • 1 (1 ounce) packet taco seasoning mix
  • 12 (8 inch) flour tortillas, or more if needed
  • 1 (14 ounce) can refried beans
  • 3 cups shredded colby-jack cheese
  • 1 (8 ounce) jar taco sauce
  • 1 cup shredded colby-jack cheese

  • preheat oven to 350 degrees f (175 degrees c). grease a 9x13-inch casserole dish.
  • heat a large skillet over medium-high heat and stir in ground beef. cook and stir until beef is crumbly, evenly browned, and no longer pink, about 10 minutes. drain and discard any excess grease. add water and taco seasoning; cook and stir until mixture has thickened, 5 to 10 minutes.
  • arrange 3 tortillas in the bottom of the casserole dish; spread about half the can of refried beans and half the ground beef atop the tortilla layer. sprinkle 1 cup colby-jack cheese over ground beef layer. arrange 3 more tortillas over the cheese. spread in the remaining 1/2 can refried beans and half the jar of taco sauce; sprinkle with 1 cup colby-jack cheese. arrange 3 more tortillas and top with remaining ground beef and 1 cup colby-jack cheese. top with last 3 tortillas and remaining 1/2 jar taco sauce.
  • bake in the preheated oven until top tortilla layer begins to brown, 20 to 25 minutes. sprinkle 1 cup colby-jack cheese over lasagna.
  • turn on oven's broiler.
  • place lasagna under the broiler until colby-jack cheese is melted and bubbling, 3 to 5 minutes.
