Meatball Noodle Soup

Total Time: 45 mins Preparation Time: 10 mins Cook Time: 35 mins

Ingredients

  • Servings: 4
  • 1 egg
  • 1 tablespoon dry breadcrumbs
  • 1 teaspoon dried parsley
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/8 teaspoon dried oregano
  • 1 lb lean ground beef
  • 2 (14 1/2 ounce) cans chicken broth
  • 1 cup fine egg noodles, uncooked

Recipe

  • 1 in a bowl, combine the first 6 ingredients. crumble beef over the mixture and mix well.
  • 2 shape into 1/2-inch balls; set aside.
  • 3 in a large saucepan, bring chicken broth to a boil; add meatballs.
  • 4 reduce heat, simmer, uncovered, for 20 minutes. add noodles; cook 15 minutes longer or until the meat is no longer pink and the noodles are tender.

Dried Beef Dip/spread

Ingredients

  • 1 (8 ounce) package softened cream cheese
  • 1/4 cup milk
  • 1 (2 1/2 ounce) package dried beef, cut into small pieces
  • 2 tablespoons onion flakes
  • 1/2 teaspoon garlic salt
  • 1/4 teaspoon pepper
  • 1/2 cup sour cream

Recipe

  • 1 beat cream cheese until smooth.
  • 2 add remaining ingredients and mix well.
  • 3 spread evenly in an 8" glass pie plate.
  • 4 bake 10 minutes in a 350-degree oven.
  • 5 serve either hot or cold with plenty of crackers for dipping/spreading.

Roast Beef Salad

Ingredients

  • 6 slices deli roast beef, sliced medium
  • french dressing
  • 1 head lettuce, shredded
  • 1 large tomato (cut up for salad as you like)
  • 1 medium sweet onion, diced
  • 1 small green pepper, chopped

Recipe

  • 1 cut roast beef into narrow 2-inch strips.
  • 2 marinate in french dressing for 1 hour.
  • 3 toss salad with tomato, onion, pepper and marinated roast beef.
  • 4 pour additional french dressing on salad.
  • 5 enjoy!

Meatball Pie With Potato Crust

Total Time: 50 mins Preparation Time: 15 mins Cook Time: 35 mins

Ingredients

  • Servings: 6
  • 1 lb lean ground beef
  • 2 (8 ounce) cans tomato sauce
  • 1 teaspoon minced onion
  • 1 egg
  • 1/4 cup dry breadcrumbs
  • 1 teaspoon salt
  • 3 tablespoons cooking oil
  • 1 (10 ounce) package frozen mixed vegetables, thawed
  • 1/2 teaspoon crushed thyme
  • 1/2 teaspoon pepper
  • 1 (12 ounce) package frozen hash brown potatoes, thawed
  • 5 -6 slices cheese, cut into 1/2 inch strips

Recipe

  • 1 combine beef,2 tablespoons of tomato sauce,egg,bread crumbs and salt.
  • 2 shape into 1 inch meatballs.
  • 3 in a skillet,brown meatballs and drain fat.
  • 4 stir in the rest of the tomato sauce,veggies,thyme and pepper -- simmer for 5 minutes.
  • 5 press potatoes over the bottom of a 10x6 inch pan sprayed with pam.
  • 6 drizzle with oil and place under broiler until lightly browned.
  • 7 spoon meatball mixture over crust and arrange cheese strips in lattice pattern on top.
  • 8 bake at 375 for 20-25 minutes.

Dried Beef Spread

Total Time: 5 mins Preparation Time: 5 mins

Ingredients

  • 1 (8 ounce) package cream cheese
  • 1 bunch green onion, chopped fine
  • 1 (3 ounce) jar dried beef, chopped fine
  • 1 dash paprika

Recipe

  • 1 throw onions and beef into a food processor and chop fine.
  • 2 add paprika and cream cheese.
  • 3 chill.
  • 4 serve with crackers.
  • 5 you can chop all of the above by hand however i use the processor.

Roast Beef With Mushroom & Onions

Total Time: 1 hr 40 mins Preparation Time: 10 mins Cook Time: 1 hr 30 mins

Ingredients

  • Servings: 4
  • 1 1/2 lbs boneless sirloin tip roast
  • 1/2 package onion and mushroom soup mix
  • 1 can cream of mushroom soup
  • 1/2 cup red wine
  • 2 cups whole mushrooms
  • 1 cup pearl onion

Recipe

  • 1 preheat oven to 325.
  • 2 remove stems from mushrooms.
  • 3 peel outer layer from pearl onions.
  • 4 rub the meat with the dry soup mix.
  • 5 place in a covered roasting pan.
  • 6 add mushroom soup, wine, mushrooms and onions.
  • 7 bake covered for 1 1/2 hours.
  • 8 serve over egg noodles or mashed potatoes.

Meatball On End

Total Time: 10 mins Preparation Time: 5 mins Cook Time: 5 mins

Ingredients

  • 1 loaf italian bread
  • 6 meatballs (this is relative to the size of your meatballs)
  • 2 cups marinara sauce
  • parmesan cheese
  • red pepper flakes

Recipe

  • 1 cut the loaf of bread in half and scoop out the center so you have a semi-hollow shell of bread. we don't want to slice it length-wise, just in half.
  • 2 heat your meatballs and sauce and divide between the two halves. sprinkle with cheese and red pepper flakes and if you want you can stuff the bread back into the cut ends of the loaf.
