Lentil Stew

Ingredients

  • Servings: 6
  • 1 cup dry lentils
  • 2 1/2 cups water
  • 2 beef bouillon cubes
  • 1/2 lb ground beef, cooked and drained
  • 2 carrots, sliced
  • 2 cups tomato juice
  • 1/2 teaspoon dried oregano
  • 1/2 cup chopped onion
  • 2 celery ribs, chopped
  • 1 garlic clove, minced

Recipe

  • 1 clean and rinse lentils.
  • 2 in a saucepan, bring lentils, water and bouillon to a boil.
  • 3 reduce heat and simmer, uncovered, about 20 minutes.
  • 4 stir in remaining ingredients.
  • 5 return to a boil, reduce heat and simmer 20-30 minutes longer or until the vegetables are tender.
