Ingredients

- 1 cup dry lentils
- 2 1/2 cups water
- 2 beef bouillon cubes
- 1/2 lb ground beef, cooked and drained
- 2 carrots, sliced
- 2 cups tomato juice
- 1/2 teaspoon dried oregano
- 1/2 cup chopped onion
- 2 celery ribs, chopped
- 1 garlic clove, minced
Recipe
- 1 clean and rinse lentils.
- 2 in a saucepan, bring lentils, water and bouillon to a boil.
- 3 reduce heat and simmer, uncovered, about 20 minutes.
- 4 stir in remaining ingredients.
- 5 return to a boil, reduce heat and simmer 20-30 minutes longer or until the vegetables are tender.
