Picadillo (ground Meat Stew)

Ingredients

  • Servings: 6
  • 2 tablespoons cooking oil
  • 1 medium onion, finely chopped
  • 2 garlic cloves, crushed
  • 1 1/2 lbs lamb or 1 1/2 lbs beef, finely chopped
  • 1 lb large tomato, peeled, seeded, and chopped
  • 2 tablespoons tomato puree
  • 1/2 cup raisins (optional)
  • 2 tablespoons red wine vinegar
  • 1 tablespoon chili powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cloves
  • 1 -3 jalapeno pepper
  • salt
  • pepper
  • 1/4 cup slivered almonds (optional)

Recipe

  • 1 heat oil and brown onion and garlic; add meat and brown. add next 9 ingredients. cover and cook slowly for 30 minutes. if the mixture dries out, add a little water. when cooked, add the peppers and salt and pepper to taste. if used, fry the almonds in a little oil and sprinkle over the picadillo. the mixture should be dry. this freezes well.
