Olive Casserole

Total Time: 1 hr 20 mins Preparation Time: 20 mins Cook Time: 1 hr

Ingredients

  • Servings: 6
  • 1 lb ground beef
  • 1 green pepper, finely chopped
  • 2 tablespoons olive oil
  • 1 garlic clove
  • 1/2 lb sharp cheddar cheese
  • 1 small onion
  • 1/2 cup stuffed olives, sliced
  • 1/2 cup black olives, sliced
  • 1/4 cup olive juice (green)
  • 1 (11 ounce) can corn, drained
  • 1 (28 ounce) can diced tomatoes, not drained
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 8 ounces wide egg noodles

Recipe

  • 1 cook egg noodles according to package directions, set aside.
  • 2 brown ground beef and green pepper in olive oil.
  • 3 grate together cheese, onion and garlic.
  • 4 combine with meat and olives.
  • 5 add olive liquid, cooked noodles, corn and tomatoes.
  • 6 mix and pour into 13x9x2 casserole dish.
  • 7 cover with foil.
  • 8 bake at 350 for 45-60 minutes.
