Parmesan - Bacon Peas

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • 2 cups english peas (fresh or frozen)
  • 1 tablespoon butter
  • 1 tablespoon dried onion
  • 1/4 cup bacon, crumbled
  • 1/3 cup beef stock
  • 1/3 cup italian seasoned breadcrumbs
  • 1/4 cup parmesan cheese, finely grated
  • 1 teaspoon black pepper, freshly cracked

Recipe

  • 1 toss fresh peas (or thawed frozen) into medium heat non stick pan.
  • 2 add butter and sautee lightly for 1-2 minutes, until peas are hot.
  • 3 add dried onions, beef stock, and bacon.
  • 4 simmer for 10 minutes, stirring occasionally, until peas are 'dry'.
  • 5 toss with bread crumbs and parmesan cheese just before serving to maintain crispiness.
  • 6 season with freshly cracked black pepper, to taste.
