Parmesan - Bacon Peas

Ingredients
- 2 cups english peas (fresh or frozen)
- 1 tablespoon butter
- 1 tablespoon dried onion
- 1/4 cup bacon, crumbled
- 1/3 cup beef stock
- 1/3 cup italian seasoned breadcrumbs
- 1/4 cup parmesan cheese, finely grated
- 1 teaspoon black pepper, freshly cracked
Recipe
- 1 toss fresh peas (or thawed frozen) into medium heat non stick pan.
- 2 add butter and sautee lightly for 1-2 minutes, until peas are hot.
- 3 add dried onions, beef stock, and bacon.
- 4 simmer for 10 minutes, stirring occasionally, until peas are 'dry'.
- 5 toss with bread crumbs and parmesan cheese just before serving to maintain crispiness.
- 6 season with freshly cracked black pepper, to taste.
