Orange Honey Vegetable Soup

Ingredients

  • Servings: 4
  • 1 lb stew beef chunk (optional)
  • 1 tablespoon extra virgin olive oil
  • 1 large garlic clove (pressed)
  • 1 beef bouillon cube
  • 1/4 cup honey
  • 1/2 cup orange juice concentrate
  • 1/2 cup cooking sherry
  • 1 cup baby carrots
  • 1 cup dried shiitake mushroom
  • 1 cup baby carrots
  • 2 cups stir fry vegetables (frozen)
  • 3 cups water
  • 1/2 teaspoon peppercorn
  • 5 red bliss potatoes, quartered
  • 2 stalks celery

Recipe

  • 1 dissolve bullion into a cup of hot water. next add the honey to the hot water.
  • 2 cut celery into 1 inch pieces. place all vegetable ingredients into your crock pot.
  • 3 put (optional) meat on top of vegetables, keeping away from the sides if possible as the vegetables will need to cook more than the meat.
  • 4 add the pepper, cooking wine and the honey-water, then add enough of the remaining water to cover the meat. my 4 1/2 quart crock pot took almost 2 additional cups, but for you this may differ.
  • 5 cook in your crock pot on the low setting for 8 to 10 hours. enjoy!
