- 5 tablespoons butter
- 5 tablespoons flour
- 7 cups beef stock
- 1 cup buttered crouton
- 1/4 cup grated swiss cheese
Recipe
- 1 melt butter in a deep saucepan.
- 2 add flour and stir well.
- 3 cook over low heat until deep brown, stirring constantly.
- 4 gradually add stock, stirring constantly.
- 5 bring to a boil.
- 6 cover and simmer over medium heat for 1 1/2 hours, stirring occasionally.
- 7 top with croutons and grated cheese.
