Mini Cheddar Meatloaves

Ingredients
- 1 egg
- 3/4 cup milk
- 1 cup shredded cheddar cheese
- 1/2 cup quick cooking oats
- 1/2 cup onion, chopped
- 1 teaspoon salt
- 1 lb ground beef (i normally use about 2 lbs)
- 2/3 cup ketchup
- 1/2 cup brown sugar, packed
- 1 1/2 teaspoons prepared mustard
Recipe
- 1 in a bowl beat eggs and milk, stir in cheese, oats, onion, and salt.
- 2 crumble beef over mixture and mix well.
- 3 shape into 8 loaves place in 13x9x2 baking dish, i normally make my loaves bigger and can get about 4-5.
- 4 in separate bowl, combine ketchup, brown sugar, and mustard, mix well.
- 5 the original recipe says to spoon over loafs and bake 45 minutes or until no longer pink and meat thermometer reads 160 degrees, uncovered at 350 degrees. however, i bake mine without the sauce until the last 10 minutes or so and then spoon the mixture over the loaves, replacing them back in oven to finish cooking.
