Monterey Jack Casserole

Ingredients
- Servings: 4
- 1 lb ground beef
- 1 tablespoon instant minced onion
- 1 (8 ounce) package corn chips, crushed (3 cups crushed)
- 1 (15 ounce) can mild enchilada sauce
- 6 ounces shredded monterey jack cheese
- sour cream (optional)
Recipe
- 1 preheat oven to 350*.
- 2 in skillet, brown ground beef.
- 3 add onion; reduce heat and saute 5 minutes.
- 4 drain excess fat.
- 5 place 2 cups of crushed corn chips in bottom of greased 1 1/2 quart dish.
- 6 layer ground beef over chips.
- 7 pour enchilada sauce over beef.
- 8 top with cheese.
- 9 bake 20-30 minutes or until bubbly and heated through.
- 10 sprinkle remaining corn chips over top of casserole.
- 11 bake additional 5 minutes.
- 12 top individual servings with sour cream, if desired.
