Monterey Jack Casserole

Total Time: 30 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1 lb ground beef
  • 1 tablespoon instant minced onion
  • 1 (8 ounce) package corn chips, crushed (3 cups crushed)
  • 1 (15 ounce) can mild enchilada sauce
  • 6 ounces shredded monterey jack cheese
  • sour cream (optional)

Recipe

  • 1 preheat oven to 350*.
  • 2 in skillet, brown ground beef.
  • 3 add onion; reduce heat and saute 5 minutes.
  • 4 drain excess fat.
  • 5 place 2 cups of crushed corn chips in bottom of greased 1 1/2 quart dish.
  • 6 layer ground beef over chips.
  • 7 pour enchilada sauce over beef.
  • 8 top with cheese.
  • 9 bake 20-30 minutes or until bubbly and heated through.
  • 10 sprinkle remaining corn chips over top of casserole.
  • 11 bake additional 5 minutes.
  • 12 top individual servings with sour cream, if desired.
