J Ko's Jelly Roll Meatloaf (version 2)

Ingredients

  • Servings: 8
  • 1 lb ground beef
  • 1 lb ground turkey (or use 2 lbs ground turkey)
  • 2 eggs, beaten
  • 2 slices fresh bread, blended to coarse crumbs
  • 1/4 cup ketchup
  • 1/4 cup milk
  • 1/4 cup instant minced onion
  • 1 1/2 teaspoons sodium-free salt or 1 1/2 teaspoons salt
  • 1/4 teaspoon fresh ground pepper
  • 1 teaspoon dried oregano
  • 1/2 teaspoon onion powder
  • 1/4 cup wheat bran
  • 1/4 cup flax seed meal
  • 4 turkey slices (packaged lunch meat)
  • 5 slices swiss cheese
  • 2 cups fresh spinach
  • 1/2 cup brown sugar
  • 1/4 cup dijon mustard or 1/4 cup spicy brown mustard

Recipe

  • 1 preheat oven to 350°f.
  • 2 in a large bowl mix all meatloaf ingredients together except turkey, cheese and spinach.
  • 3 pat onto a 12x12 sheet of aluminum foil pushing to edges.
  • 4 lay turkey slices on top, keeping 1 inch (2.5 cm) in from edges.
  • 5 spread spinach over ham. roll up starting from long end, removing foil as you go.
  • 6 carefully transfer to baking sheet with sides or a jelly roll pan. pat in sides of meatloaf roll to smooth them.
  • 7 mix topping ingredients in a small bowl and pour over the meatloaf, covering all parts.
  • 8 bake for 1 hour.
