Rainbow Casserole

Ingredients

- 5 potatoes, peeled and sliced
- 1 lb ground beef
- 1 onion, peeled and sliced
- salt
- black pepper
- 1 (28 ounce) can stewed tomatoes, drained
- 1 (6 ounce) can peas
Recipe
- 1 preheat oven to 350 degrees. spray 3 quart casserole dish with nonstick cooking spray.
- 2 boil potatoes in salted water in large saucepan until almost tender, drain.
- 3 cook and stir ground beef in skillet until no longer pink. drain fat and discard.
- 4 layer 1/2 of the ground beef, 1/2 of the potatoes, 1/2 of onion, salt, pepper, 1/2 tomatoes and 1/2 of peas. repeat layers. add reserved tomato juice.
- 5 bake, covered about 40 minutes or until most of liquid is absorbed.
