Meat And Potatoes, Boer Style

Ingredients

  • Servings: 2
  • 8 ounces ground beef, cooked
  • 4 ounces onions, chopped
  • 1 teaspoon curry powder
  • 2 apricots, peeled, chopped, pitted
  • 2 slices bread, crumbs
  • 1/2 cup evaporated skim milk
  • salt
  • pepper
  • 1/2 cup tomato puree
  • 1 (1 ounce) packet instant beef bouillon
  • 1 teaspoon fresh parsley, chopped

Recipe

  • 1 place beef in mixing bowl, lightly brown onions in a nonstick pan.
  • 2 add to beef the curry powder, apricots, tomato, bread crumbs and milk.
  • 3 mix well. season to taste.
  • 4 shape into a loaf, place bay leaf on top and wrap with aluminum foil.
  • 5 bake at 375 degrees until firm.
  • 6 heat tomato puree; add broth mix.
  • 7 divide loaf equally and serve half of sauce over each portion.
  • 8 sprinkle with parsley.
