Ingredients

- 8 ounces ground beef, cooked
- 4 ounces onions, chopped
- 1 teaspoon curry powder
- 2 apricots, peeled, chopped, pitted
- 2 slices bread, crumbs
- 1/2 cup evaporated skim milk
- salt
- pepper
- 1/2 cup tomato puree
- 1 (1 ounce) packet instant beef bouillon
- 1 teaspoon fresh parsley, chopped
Recipe
- 1 place beef in mixing bowl, lightly brown onions in a nonstick pan.
- 2 add to beef the curry powder, apricots, tomato, bread crumbs and milk.
- 3 mix well. season to taste.
- 4 shape into a loaf, place bay leaf on top and wrap with aluminum foil.
- 5 bake at 375 degrees until firm.
- 6 heat tomato puree; add broth mix.
- 7 divide loaf equally and serve half of sauce over each portion.
- 8 sprinkle with parsley.
