Pinto Bean & Ground Beef Casserole

Total Time: 50 mins Preparation Time: 15 mins Cook Time: 35 mins

Ingredients

  • Servings: 8
  • 6 ounces cooked ultra lean ground beef
  • 1/2 cup chopped onion
  • 1/2 cup chopped green bell pepper
  • 24 ounces cooked pinto beans, canned to save time
  • 15 ounces stewed tomatoes, canned
  • 6 ounces part-skim mozzarella cheese
  • 1 cup self-rising cornmeal, plus
  • 2 teaspoons self-rising cornmeal
  • 1 cup skim milk

Recipe

  • 1 saute beef, onion, and pepper.
  • 2 place in a sprayed casserole dish.
  • 3 layer next 3 ingredients.
  • 4 mix milk and corn meal together.
  • 5 pour on top of other ingredients.
  • 6 bake at 400 degrees for 20 to 25 minutes until golden brown.
