Mexi-corn Lasagna By Dei Fratelli

Total Time: 50 mins Preparation Time: 15 mins Cook Time: 35 mins

Ingredients

  • 1 lb ground beef
  • 1 (14 1/2 ounce) can corn, drained
  • 1 (14 1/2 ounce) can chopped tomatoes, dei fratelli mexican tomatoes
  • 1 cup picante sauce
  • 1 tablespoon chili powder
  • 1 1/2 teaspoons ground cumin
  • 16 ounces low fat cottage cheese
  • 2 eggs, slightly beaten
  • 1/4 cup grated parmesan cheese
  • 1 teaspoon oregano
  • 1/2 teaspoon garlic salt
  • 12 tortillas
  • 1/4 cup shredded cheddar cheese

Recipe

  • 1 preheat oven to 375°f.
  • 2 brown meat, drain.
  • 3 add corn, picante sauce, dei fratelli chopped mexican tomatoes, chili powder and cumin.
  • 4 simmer, stirring frequently for 5 minutes.
  • 5 combine cottage cheese, oregano & garlic salt.
  • 6 arrange 6 tortillas in a lightly greased 13x9x2 pan overlapping as necessary.
  • 7 top with meat mixture.
  • 8 spread cheese mixture.
  • 9 arrange tortillas.
  • 10 repeat layers until all mixtures are used.
  • 11 bake for 30 minutes.
