Layered Mexican Casserole

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 6
  • 1/2 lb ground beef
  • 1 (11 ounce) can whole kernel corn, drained
  • 1 1/2 cups taco bell home originals thick 'n chunky salsa
  • 1 cup cottage cheese
  • 1 (8 ounce) container sour cream
  • 5 cups tortilla chips, divided
  • 1 1/2 cups kraft shredded cheddar cheese, divided

Recipe

  • 1 preheat oven to 350 degrees f.
  • 2 brown meat in large skillet; drain.
  • 3 add corn and salsa; mix well.
  • 4 cook until heated through, stirring occasionally. set aside.
  • 5 mix cottage cheese and sour cream.
  • 6 layer 2 cups of the chips, 1/2 of the meat mixture, 3/4 cup of the cheddar cheese and 1/2 of the cottage cheese mixture in 2-quart casserole dish.
  • 7 repeat layers of chips, meat mixture and cottage cheese mixture.
  • 8 bake 35 minutes.
  • 9 insert remaining chips around edge of casserole; top with remaining 3/4 cup cheddar cheese.
  • 10 bake an additional 10 minutes or until cheese is melted.
