Mexican Chef's Salad

Total Time: 30 mins Preparation Time: 20 mins Cook Time: 10 mins

Ingredients

  • 1 lb ground beef
  • 2 cups ranch style beans, drained and rinsed
  • 1/4 teaspoon salt
  • 1 onion, chopped
  • 2 large tomatoes, wedged
  • 2 (10 ounce) bags lettuce
  • 4 ounces cheddar cheese, grated (or more)
  • 4 -6 ounces catalina dressing (to taste)
  • hot sauce (optional)
  • 2 large avocados, peeled & wedged
  • 1 (14 1/2 ounce) bag fritos corn chips, original

Recipe

  • 1 brown ground beef, together with beans & salt for about 10 minutes. drain and cool completely.
  • 2 toss together lettuce, onion, cheese, catalina dressing, hot sauce (optional), and tomato wedges, reserving some tomato for garnish.
  • 3 just prior to serving, lightly toss the meat mixture in with the lettuce mix, along with the fritos and avocados, reserving a few avocado slices for garnish.
  • 4 serve with fresh french garlic bread--yum!
