Mexican Chef's Salad

Ingredients
- 1 lb ground beef
- 2 cups ranch style beans, drained and rinsed
- 1/4 teaspoon salt
- 1 onion, chopped
- 2 large tomatoes, wedged
- 2 (10 ounce) bags lettuce
- 4 ounces cheddar cheese, grated (or more)
- 4 -6 ounces catalina dressing (to taste)
- hot sauce (optional)
- 2 large avocados, peeled & wedged
- 1 (14 1/2 ounce) bag fritos corn chips, original
Recipe
- 1 brown ground beef, together with beans & salt for about 10 minutes. drain and cool completely.
- 2 toss together lettuce, onion, cheese, catalina dressing, hot sauce (optional), and tomato wedges, reserving some tomato for garnish.
- 3 just prior to serving, lightly toss the meat mixture in with the lettuce mix, along with the fritos and avocados, reserving a few avocado slices for garnish.
- 4 serve with fresh french garlic bread--yum!
