Murphy's Onion Soup

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • Servings: 8
  • 2 tablespoons butter, unsalted
  • 3 large yellow onions, sliced
  • 2 large red onions, sliced
  • 4 shallots, minced
  • 2 garlic cloves, minced
  • 2 bay leaves
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 1 tablespoon dark brown sugar
  • 3 cups beef stock or 3 cups canned beef broth
  • 1 cup stout beer
  • salt
  • pepper, fresh ground
  • 1 cup cheese (your choice, but i like soft , melty cheeses like swiss or mozzarella)

Recipe

  • 1 in a large saucepan, melt butter then add onions, shallots and garlic. cook for 10 - 15 minutes until soft but not browned.
  • 2 add bay leaves, basil thyme, brown sugar, stock or broth and stout.
  • 3 bring to a boil, then reduce heat to low and simmer, covered 25 - 30 minutes or until onions are tender. season to taste with salt and pepper.
  • 4 preheat the broiler, arrange heat proof onion soup bowls on a baking sheet. ladle soup into bowls and sprinkle with cheese. place 4" under broiler and broil 1 - 2 minutes or until cheese melts and starts to brown.
  • 5 remove carefully with oven mitts, place on a serving plate and enjoy!
