Murphy's Onion Soup

Ingredients

- 2 tablespoons butter, unsalted
- 3 large yellow onions, sliced
- 2 large red onions, sliced
- 4 shallots, minced
- 2 garlic cloves, minced
- 2 bay leaves
- 1 teaspoon dried basil
- 1 teaspoon dried thyme
- 1 tablespoon dark brown sugar
- 3 cups beef stock or 3 cups canned beef broth
- 1 cup stout beer
- salt
- pepper, fresh ground
- 1 cup cheese (your choice, but i like soft , melty cheeses like swiss or mozzarella)
Recipe
- 1 in a large saucepan, melt butter then add onions, shallots and garlic. cook for 10 - 15 minutes until soft but not browned.
- 2 add bay leaves, basil thyme, brown sugar, stock or broth and stout.
- 3 bring to a boil, then reduce heat to low and simmer, covered 25 - 30 minutes or until onions are tender. season to taste with salt and pepper.
- 4 preheat the broiler, arrange heat proof onion soup bowls on a baking sheet. ladle soup into bowls and sprinkle with cheese. place 4" under broiler and broil 1 - 2 minutes or until cheese melts and starts to brown.
- 5 remove carefully with oven mitts, place on a serving plate and enjoy!
