Red Enchilada Sauce

Ingredients

  • Servings: 4
  • 4 tablespoons butter
  • 4 tablespoons flour
  • 1/2 onion
  • 3 -4 garlic cloves
  • 2 (6 ounce) cans tomato paste
  • 32 ounces chicken stock
  • 3 teaspoons cumin
  • 4 teaspoons garlic powder
  • 2 teaspoons ground cayenne pepper
  • 2 tablespoons hot sauce (chipotel tobasco)
  • salt and pepper
  • 2 teaspoons oregano

Recipe

  • 1 melt butter in a medium sauce pot.
  • 2 mince onion and garlic.
  • 3 add onion and saute about 3 min.
  • 4 add garlic and saute for about 1 min.
  • 5 add flour and stir until brown.
  • 6 add tomato paste and mix well.
  • 7 slowly add chicken stock and spices.
  • 8 bring to a simmer until thickened.
  • 9 pour over enchiladas or add to browned beef or chicken.
