Red Enchilada Sauce

Ingredients

- 4 tablespoons butter
- 4 tablespoons flour
- 1/2 onion
- 3 -4 garlic cloves
- 2 (6 ounce) cans tomato paste
- 32 ounces chicken stock
- 3 teaspoons cumin
- 4 teaspoons garlic powder
- 2 teaspoons ground cayenne pepper
- 2 tablespoons hot sauce (chipotel tobasco)
- salt and pepper
- 2 teaspoons oregano
Recipe
- 1 melt butter in a medium sauce pot.
- 2 mince onion and garlic.
- 3 add onion and saute about 3 min.
- 4 add garlic and saute for about 1 min.
- 5 add flour and stir until brown.
- 6 add tomato paste and mix well.
- 7 slowly add chicken stock and spices.
- 8 bring to a simmer until thickened.
- 9 pour over enchiladas or add to browned beef or chicken.
