Mom's Homemade Veggie Soup

Total Time: 10 hrs 15 mins Preparation Time: 15 mins Cook Time: 10 hrs

Ingredients

  • Servings: 5
  • 1 lb beef short rib
  • 1 lb boneless beef short ribs or 1 lb stew meat
  • 2 tablespoons beef bouillon granules
  • 1 small tomato, diced
  • 1 medium onion, diced
  • 1 medium potato, diced
  • 2 -3 garlic cloves, minced
  • 16 ounces beans and carrots vegetable mix

Recipe

  • 1 fill a large stock pot with water 3/4 of the way. add both kinds of short ribs. bring to a boil. remove all the scum that floats to the top. when very little to no more scum floats up, remove from heat.
  • 2 place meat in crock pot. strain impurities from broth, and place as much clean broth into the crock pot as can fit, leaving room for veggie to be added later.
  • 3 add boullion, onion, tomato, garlic and potato to crock pot. cook on low for 8 hours.
  • 4 cook frozen veggies according to package directions and add to crock pot. cook on high for up to one hour.
  • 5 salt and pepper to taste.
