Mom's Meatloaf Made Healthy

Ingredients
- 2 slices bread, crumbled
- 1/4 cup skim milk
- 3/4 lb extra lean ground beef
- 1 cup carrot, grated
- 1 stalk celery, finely chopped
- 1 medium onion, minced
- 2 garlic cloves, minced
- 1 (6 ounce) can tomato paste (no salt added is best)
- 1 egg , slightly beaten
- 1/2 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Recipe
- 1 preheat oven to 400 degrees, line 8 1/2 x 4 1/2 inch loaf pan with foil.
- 2 in large bowl, combine bread and milk. add beef, carrots, celery, onion, garlic, tomato paste, egg , thyme, salt, and pepper, mix until well combined.
- 3 transfer to prepared pan and bake 45 minutes (the recipe says 25 minutes, but it didn't seem done by then), or until cooked through. serve hot, warm, or chilled.
