Mom's Meatloaf Made Healthy

Total Time: 1 hr 10 mins Preparation Time: 45 mins Cook Time: 25 mins

Ingredients

  • 2 slices bread, crumbled
  • 1/4 cup skim milk
  • 3/4 lb extra lean ground beef
  • 1 cup carrot, grated
  • 1 stalk celery, finely chopped
  • 1 medium onion, minced
  • 2 garlic cloves, minced
  • 1 (6 ounce) can tomato paste (no salt added is best)
  • 1 egg , slightly beaten
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Recipe

  • 1 preheat oven to 400 degrees, line 8 1/2 x 4 1/2 inch loaf pan with foil.
  • 2 in large bowl, combine bread and milk. add beef, carrots, celery, onion, garlic, tomato paste, egg , thyme, salt, and pepper, mix until well combined.
  • 3 transfer to prepared pan and bake 45 minutes (the recipe says 25 minutes, but it didn't seem done by then), or until cooked through. serve hot, warm, or chilled.
