Minestrone Soup

Ingredients
- 1 stalk celery, chopped
- 1 carrot, chopped
- 1 (14 ounce) can kidney beans
- 2 (14 ounce) cans tomatoes
- 1 cup beef stock
- 1 cup water
- 1 bouquet garni
- 2 garlic cloves
- 1 shallot
- 1 teaspoon extra virgin olive oil
- 1/3 cup tomato puree
- 1/3 cup sherry wine
Recipe
- 1 heat oil in a large pot.
- 2 saute the onions and garlic in the oil until soft.
- 3 add the remaining ingredients and bring to boil.
- 4 let the mixture cook for 30 minutes.
- 5 add salt and pepper to taste.
- 6 serve.
