Minestrone Soup

Total Time: 30 mins Cook Time: 30 mins

Ingredients

  • 1 stalk celery, chopped
  • 1 carrot, chopped
  • 1 (14 ounce) can kidney beans
  • 2 (14 ounce) cans tomatoes
  • 1 cup beef stock
  • 1 cup water
  • 1 bouquet garni
  • 2 garlic cloves
  • 1 shallot
  • 1 teaspoon extra virgin olive oil
  • 1/3 cup tomato puree
  • 1/3 cup sherry wine

Recipe

  • 1 heat oil in a large pot.
  • 2 saute the onions and garlic in the oil until soft.
  • 3 add the remaining ingredients and bring to boil.
  • 4 let the mixture cook for 30 minutes.
  • 5 add salt and pepper to taste.
  • 6 serve.
