Pat's Tomato Bread Soup

Total Time: 1 hr 20 mins Preparation Time: 10 mins Cook Time: 1 hr 10 mins

Ingredients

  • Servings: 6
  • 1/2 cup olive oil
  • 2 garlic cloves, crushed
  • 4 ounces bread, day old
  • 4 cups beef broth
  • 1 lb tomato, canned
  • 1 dash fresh basil leaves or 1 dash fresh spinach leaves

Recipe

  • 1 put olive oil in a soup pot and add crushed garlic and bread.
  • 2 saute bread until golden.
  • 3 add beef broth and tomatoes.
  • 4 cover and simmer for 30 minutes.
  • 5 remove cover and simmer an additional 40 minutes.
  • 6 just before serving, add fresh basil leaves or spinach leaves.
  • 7 cooking time is approximate.
