Italian Meatloaf

Total Time: 1 hr 5 mins Preparation Time: 10 mins Cook Time: 55 mins

Ingredients

  • Servings: 4
  • 4 slices whole wheat bread (or can use 2 each rye and )
  • 1 lb ground beef
  • 1 medium onion, chopped (can reduce this to make more kid-friendly)
  • 4 sprigs parsley or 2 teaspoons dried parsley
  • 3 tablespoons parmesan cheese
  • 1 egg
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 (8 ounce) can tomato sauce
  • 1 teaspoon oregano

Recipe

  • 1 soak bread in 1 cup water in large bowl for several minutes, then mash bread with fork.
  • 2 add ground beef, onion, parsley, parmesan cheese, egg, salt and pepper; mix well.
  • 3 place in loaf pan and bake at 350 for 30 minutes.
  • 4 pour tomato sauce over meatloaf and sprinkle with oregano.
  • 5 bake 25 minutes longer.
