Italian Meatloaf

Ingredients

  • Servings: 6
  • 1 cup boiling water
  • 1/2 cup sun-dried tomato, packed without oil
  • 1/2 cup ketchup, plus 1/3 cup
  • 1 cup seasoned bread crumbs
  • 1 small onion, finely chopped
  • 1/2 cup fresh basil, chopped
  • 1/2 cup shredded provolone cheese
  • 2 large egg whites
  • 2 garlic cloves, minced
  • 1 lb ground round
  • cooking spray

Recipe

  • 1 combine boiling water and tomatoes in a bowl; let stand for 30 minutes or until soft. drain tomatoes, then finely chop.
  • 2 preheat oven to 350. combine 1/2 cup ketchup, bread crumbs, onion, basil, provolone cheese, egg whites, garlic and ground round in a large bowl. add tomatoes to meat mixture. shape meat mixture into a 9x5-inch loaf on a broiler pan coated with cooking spray. spread 1/3 cup ketchup over meatloaf.
  • 3 bake for 1 hour or until a thermometer registers 160. let stand for 10 minutes before slicing. cut into 6 slices.
