Italian Meatloaf

Ingredients

- 1 cup boiling water
- 1/2 cup sun-dried tomato, packed without oil
- 1/2 cup ketchup, plus 1/3 cup
- 1 cup seasoned bread crumbs
- 1 small onion, finely chopped
- 1/2 cup fresh basil, chopped
- 1/2 cup shredded provolone cheese
- 2 large egg whites
- 2 garlic cloves, minced
- 1 lb ground round
- cooking spray
Recipe
- 1 combine boiling water and tomatoes in a bowl; let stand for 30 minutes or until soft. drain tomatoes, then finely chop.
- 2 preheat oven to 350. combine 1/2 cup ketchup, bread crumbs, onion, basil, provolone cheese, egg whites, garlic and ground round in a large bowl. add tomatoes to meat mixture. shape meat mixture into a 9x5-inch loaf on a broiler pan coated with cooking spray. spread 1/3 cup ketchup over meatloaf.
- 3 bake for 1 hour or until a thermometer registers 160. let stand for 10 minutes before slicing. cut into 6 slices.
