Meatloaf

Total Time: 1 hr 20 mins Preparation Time: 20 mins Cook Time: 1 hr

Ingredients

  • Servings: 4
  • 2 lbs ground beef
  • 1 1/4 ounces lipton onion soup mix
  • 1/2 cup diced onion
  • 1 -2 garlic clove, minced
  • 1/4 teaspoon pepper
  • 1/2 teaspoon salt
  • 2 eggs, beaten
  • 1/3 cup chili sauce
  • 1 serrano pepper, diced (optional)
  • up to 1 cup cracker, crushed
  • 2/3 cup chili sauce
  • 3 tablespoons wine vinegar
  • 2 teaspoons worcestershire sauce
  • 1/2 cup brown sugar, packed
  • 1 1/2 teaspoons brown mustard

Recipe

  • 1 preheat oven to 350°f.
  • 2 saute onions, garlic, serrano pepper in 1 tbsp oil in a small pan until onions are translucent.
  • 3 mix the meatloaf ingredients together, mixing in the crackers last until desired consistency (use no more than 1 cup).
  • 4 shape the meatloaf mixture into a loaf and place in a lightly greased 9x13 baking dish.
  • 5 place meatloaf into oven and set timer for 60 minutes.
  • 6 mix sauce ingredients together in a small saucepan, bring to boil and simmer for 5 minutes.
  • 7 baste meatloaf with sauce after first 15 minutes of cooking and every 15 minutes afterwards.
  • 8 bake meatloaf until internal temperature reaches 155 f (will rise to 160 f after removing from oven), about 45 min to 1 hr of cooking total.
  • 9 remove from oven and let rest for 5 minutes before slicing.
  • 10 serve meatloaf with remaining sauce.
