Meatloaf

Ingredients

- 2 lbs ground beef
- 1 1/4 ounces lipton onion soup mix
- 1/2 cup diced onion
- 1 -2 garlic clove, minced
- 1/4 teaspoon pepper
- 1/2 teaspoon salt
- 2 eggs, beaten
- 1/3 cup chili sauce
- 1 serrano pepper, diced (optional)
- up to 1 cup cracker, crushed
- 2/3 cup chili sauce
- 3 tablespoons wine vinegar
- 2 teaspoons worcestershire sauce
- 1/2 cup brown sugar, packed
- 1 1/2 teaspoons brown mustard
Recipe
- 1 preheat oven to 350°f.
- 2 saute onions, garlic, serrano pepper in 1 tbsp oil in a small pan until onions are translucent.
- 3 mix the meatloaf ingredients together, mixing in the crackers last until desired consistency (use no more than 1 cup).
- 4 shape the meatloaf mixture into a loaf and place in a lightly greased 9x13 baking dish.
- 5 place meatloaf into oven and set timer for 60 minutes.
- 6 mix sauce ingredients together in a small saucepan, bring to boil and simmer for 5 minutes.
- 7 baste meatloaf with sauce after first 15 minutes of cooking and every 15 minutes afterwards.
- 8 bake meatloaf until internal temperature reaches 155 f (will rise to 160 f after removing from oven), about 45 min to 1 hr of cooking total.
- 9 remove from oven and let rest for 5 minutes before slicing.
- 10 serve meatloaf with remaining sauce.
