Easy Pot Roast

Total Time: 2 hrs 20 mins Preparation Time: 20 mins Cook Time: 2 hrs

Ingredients

  • Servings: 6
  • 2 -3 lbs roast (beef or veal)
  • flour
  • salt and pepper
  • vegetable oil
  • 2 large onions, sliced into rings
  • 1 (16 ounce) can tomatoes with juice
  • 1/2 teaspoon thyme
  • 1 bay leaf

Recipe

  • 1 coat roast with flour, salt,& pepper.
  • 2 brown well in oil, about 10 minutes on each side.
  • 3 during last 5 minutes, add sliced onions.
  • 4 add tomatoes, thyme, and bay leaf.
  • 5 crush tomatoes with cooking spoon.
  • 6 bring to boil, lower heat and simmer covered for 2 hours.
