Marcella's Stuffed Rigatoni

Ingredients

- 2 lbs ground beef
- 1 teaspoon oregano
- 2 medium onions, chopped fine
- 1 green pepper, chopped fine
- 3 cloves garlic
- 2 (10 2/3 ounce) cans cream of mushroom soup
- 1 (10 2/3 ounce) can milk
- 1 cup ketchup
- 1 (16 ounce) box rigatoni pasta
Recipe
- 1 in a large frying pan brown the ground beef.
- 2 drain the fat.
- 3 add the garlic, onions, and green pepper.
- 4 cook until veggies begin to soften (3 minutes).
- 5 add the oregano and ketchup and mix.
- 6 continue to cook on low for 10 minutes so all the flavors come together.
- 7 meanwhile cook the rigatoni noodles so the are half cooked.
- 8 once the meat mixture has cooled stuff the rigatoni noodles with the meat mixture and place into a 11x9 casserole dish making several layers.
- 9 in a small sauce pan combine the mushroom soup and milk and heat and mix until smooth.
- 10 pour this over the stuffed noodles and cook in a 300 degree oven for 35-40 minutes.
