Marcella's Stuffed Rigatoni

Total Time: 1 hr 5 mins Preparation Time: 30 mins Cook Time: 35 mins

Ingredients

  • Servings: 10
  • 2 lbs ground beef
  • 1 teaspoon oregano
  • 2 medium onions, chopped fine
  • 1 green pepper, chopped fine
  • 3 cloves garlic
  • 2 (10 2/3 ounce) cans cream of mushroom soup
  • 1 (10 2/3 ounce) can milk
  • 1 cup ketchup
  • 1 (16 ounce) box rigatoni pasta

Recipe

  • 1 in a large frying pan brown the ground beef.
  • 2 drain the fat.
  • 3 add the garlic, onions, and green pepper.
  • 4 cook until veggies begin to soften (3 minutes).
  • 5 add the oregano and ketchup and mix.
  • 6 continue to cook on low for 10 minutes so all the flavors come together.
  • 7 meanwhile cook the rigatoni noodles so the are half cooked.
  • 8 once the meat mixture has cooled stuff the rigatoni noodles with the meat mixture and place into a 11x9 casserole dish making several layers.
  • 9 in a small sauce pan combine the mushroom soup and milk and heat and mix until smooth.
  • 10 pour this over the stuffed noodles and cook in a 300 degree oven for 35-40 minutes.
