Low Fat Beef Marrakesh

Total Time: 2 hrs 15 mins Preparation Time: 15 mins Cook Time: 2 hrs

Ingredients

  • Servings: 4
  • 1 1/2 lbs beef
  • 1/2 red onion
  • 2 teaspoons garlic
  • 1 tablespoon cumin
  • 1 tablespoon ground coriander
  • 1 tablespoon turmeric
  • 1/2 teaspoon cinnamon
  • 1/2 cup raisins
  • 1 cup apricot nectar
  • 1 cup fat-free beef stock

Recipe

  • 1 heat frypan; add 1 tbsp stock and saute diced red onions for about 5 minutes; lightly brown; set aside.
  • 2 add in small batches diced beef (i used strips sliced in two or three); brown; set aside.
  • 3 return beef and onion to pan and add rest of ingredients; combine well.
  • 4 cover and simmer on low for about 1 to 1 1/4 hours until meat melts in your mouth ; check at about 15 minute intervals and stir; if requires more liquid, add 1/2 nectar plus 1/2 beef broth at a time.
  • 5 enjoy!
  • 6 note: i top with coriander leaves; can use parsley if preferred.
