Madeira Sauce

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 1 small onion, finely chopped
  • 2 fluid ounces madeira wine
  • 27 fluid ounces beef stock
  • 1/2 ounce butter

Recipe

  • 1 sauté the onions in a hot pan until they are well browned.
  • 2 add the madeira.
  • 3 reduce the liquid by half, add the stock and then reduce by half again.
  • 4 season.
  • 5 pass through a sieve, then add the butter.
  • 6 serve warm.
