Ingredients

- 1 small onion, finely chopped
- 2 fluid ounces madeira wine
- 27 fluid ounces beef stock
- 1/2 ounce butter
Recipe
- 1 sauté the onions in a hot pan until they are well browned.
- 2 add the madeira.
- 3 reduce the liquid by half, add the stock and then reduce by half again.
- 4 season.
- 5 pass through a sieve, then add the butter.
- 6 serve warm.
