Maura's French Onion Soup
Total Time: 3 hrs 50 mins
Preparation Time: 20 mins
Cook Time: 3 hrs 30 mins
Ingredients
- Servings: 4
- 4 medium yellow onions, sliced into thin rings
- 2 tablespoons butter
- 1 cup red wine
- 2 tablespoons flour
- 1 tablespoon sugar
- 3 (13 ounce) cans beef broth
- 1 teaspoon dark soy sauce or 1 teaspoon gravy master
- 2 beef bouillon cubes
- 1 dash dried rosemary
- 1 dash pepper
- 2 bay leaves
Recipe
- 1 cook the onions in butter over medium/low heat for 20 minutes or until browned.
- 2 (you want the onions to be a golden color, but not black!) remove from heat, and set aside.
- 3 mix sugar, flour, a few dashes of pepper& rosemary, and 2/3 cup of the wine into a paste mixture.
- 4 add this to the onions, and mix well.
- 5 put the onion mixture into the crockpot.
- 6 add broth and bay leaves.
- 7 stir soup mixture very gently. (stirring doesn't have to be overly thorough... just enough so that the onions are no longer a paste.)
- 8 cook on "high" for 2 1/2 hours.
- 9 add soy sauce, buillon cubes, and remaining 1/3 cup of wine.
- 10 cover and continue cooking for 30 minutes.
- 11 ladle into soup bowls and enjoy!
