Maura's French Onion Soup

Total Time: 3 hrs 50 mins Preparation Time: 20 mins Cook Time: 3 hrs 30 mins

Ingredients

  • Servings: 4
  • 4 medium yellow onions, sliced into thin rings
  • 2 tablespoons butter
  • 1 cup red wine
  • 2 tablespoons flour
  • 1 tablespoon sugar
  • 3 (13 ounce) cans beef broth
  • 1 teaspoon dark soy sauce or 1 teaspoon gravy master
  • 2 beef bouillon cubes
  • 1 dash dried rosemary
  • 1 dash pepper
  • 2 bay leaves

Recipe

  • 1 cook the onions in butter over medium/low heat for 20 minutes or until browned.
  • 2 (you want the onions to be a golden color, but not black!) remove from heat, and set aside.
  • 3 mix sugar, flour, a few dashes of pepper& rosemary, and 2/3 cup of the wine into a paste mixture.
  • 4 add this to the onions, and mix well.
  • 5 put the onion mixture into the crockpot.
  • 6 add broth and bay leaves.
  • 7 stir soup mixture very gently. (stirring doesn't have to be overly thorough... just enough so that the onions are no longer a paste.)
  • 8 cook on "high" for 2 1/2 hours.
  • 9 add soy sauce, buillon cubes, and remaining 1/3 cup of wine.
  • 10 cover and continue cooking for 30 minutes.
  • 11 ladle into soup bowls and enjoy!
