Norwegian Potato Soup

Ingredients

  • Servings: 10
  • 8 medium potatoes, peeled and cubed
  • 2 large onions, chopped
  • 1 cup celery, sliced
  • 1 1/2 cups carrots, sliced
  • 6 cups beef stock
  • salt and pepper
  • 1 lb ground beef
  • 1 egg
  • 3 tablespoons milk
  • salt and pepper

Recipe

  • 1 add all vegetables to meat stock. season to taste and simmer for one hour.
  • 2 combine beef, egg, milk and seasonings. form into very small meatballs.
  • 3 drop meatballs into boiling soup and cook 10 to 15 minutes.
