Mini Meatloaves

Ingredients
- Servings: 4
- 1 1/4 lbs ground beef
- 1 egg (lightly beaten)
- 1 cup plain breadcrumbs
- 1/4 cup half-and-half (can use low fat, i did)
- 1/2 large onion, chopped (more or less to taste)
- 1 stalk celery, chopped
- 2 garlic cloves, minced
- salt & pepper (more or less to taste)
- 1 (12 ounce) jar apricot jam
Recipe
- 1 combine ground beef, bread crumbs, half-and-half, onion, celery, garlic, salt, pepper mix well.
- 2 spray mini-loaf pans with no-stick cooking spray. divide meat mixture into pans equally.
- 3 bake meatloaves at 350 for 5 minutes.
- 4 mix together apricot jam & enough water to make a nice consistency glaze. glaze the meatloaves with this mixture and cover each with foil. bake 20 minutes.
- 5 remove foil and reglaze with remaining mixture and bake another 15 minutes.
- 6 i served this with cheddar mashed taters & tossed salad.
