Mini Meatloaves

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 1 1/4 lbs ground beef
  • 1 egg (lightly beaten)
  • 1 cup plain breadcrumbs
  • 1/4 cup half-and-half (can use low fat, i did)
  • 1/2 large onion, chopped (more or less to taste)
  • 1 stalk celery, chopped
  • 2 garlic cloves, minced
  • salt & pepper (more or less to taste)
  • 1 (12 ounce) jar apricot jam

Recipe

  • 1 combine ground beef, bread crumbs, half-and-half, onion, celery, garlic, salt, pepper mix well.
  • 2 spray mini-loaf pans with no-stick cooking spray. divide meat mixture into pans equally.
  • 3 bake meatloaves at 350 for 5 minutes.
  • 4 mix together apricot jam & enough water to make a nice consistency glaze. glaze the meatloaves with this mixture and cover each with foil. bake 20 minutes.
  • 5 remove foil and reglaze with remaining mixture and bake another 15 minutes.
  • 6 i served this with cheddar mashed taters & tossed salad.
