Party Beef Roll Ups

Ingredients

  • Servings: 48
  • 1 lb lean ground beef
  • 1 cup cooked wild rice
  • 1/2 cup chopped onion
  • 1/2 cup fine dry breadcrumb
  • 2 eggs, slightly beaten
  • 1 clove garlic, minced
  • 2 cups barbecue sauce, divided
  • 8 flour tortillas (8 inch)
  • 3/4 cup chopped green onion
  • 1/2 cup fresh cilantro leaves

Recipe

  • 1 preheat oven to 450.
  • 2 in medium bowl, combine beef, wild rice, chopped onion, crumbs, eggs garlic and 2 tablespoons sauce.
  • 3 shape into 8 (8 inch) logs; place on baking sheets.
  • 4 bake about 14 minutes or until no longer pink and juices run clear; set aside microwave each tortilla on high 5 seconds; spread with about 2 teaspoons sauce.
  • 5 top with green onions and cilantro.
  • 6 place 1 log at edge of each tortilla.
  • 7 roll up and secure with toothpicks; cut each roll into 6 to 8 pieces.
  • 8 serve with remaining sauce for dipping.
