Party Beef Roll Ups

Ingredients

- 1 lb lean ground beef
- 1 cup cooked wild rice
- 1/2 cup chopped onion
- 1/2 cup fine dry breadcrumb
- 2 eggs, slightly beaten
- 1 clove garlic, minced
- 2 cups barbecue sauce, divided
- 8 flour tortillas (8 inch)
- 3/4 cup chopped green onion
- 1/2 cup fresh cilantro leaves
Recipe
- 1 preheat oven to 450.
- 2 in medium bowl, combine beef, wild rice, chopped onion, crumbs, eggs garlic and 2 tablespoons sauce.
- 3 shape into 8 (8 inch) logs; place on baking sheets.
- 4 bake about 14 minutes or until no longer pink and juices run clear; set aside microwave each tortilla on high 5 seconds; spread with about 2 teaspoons sauce.
- 5 top with green onions and cilantro.
- 6 place 1 log at edge of each tortilla.
- 7 roll up and secure with toothpicks; cut each roll into 6 to 8 pieces.
- 8 serve with remaining sauce for dipping.
