Lickety Split Lasagna Soup

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 1 lb ground beef
  • 1 green bell pepper, chopped
  • 3 garlic cloves, minced
  • 1 medium onion, chopped
  • 2 (14 1/2 ounce) cans diced tomatoes
  • 1 (15 ounce) can tomato sauce
  • 32 ounces chicken broth
  • 1 tablespoon brown sugar
  • 2 teaspoons italian seasoning
  • 1/2 teaspoon salt
  • 1 teaspoon dried thyme
  • 2 cups lasagna noodles, broken
  • 1/4 cup parmesan cheese, grated
  • 1 1/2 cups mozzarella cheese, finely shredded

Recipe

  • 1 brown ground beef, green pepper, and garlic cloves in dutch oven or stock pot; drain.
  • 2 add onion, diced tomatoes, and tomato sauce.
  • 3 stir in chicken broth, brown sugar, italian seasoning, salt, and thyme.
  • 4 bring to a boil; add lasagna noodles.
  • 5 reduce heat and simmer for 20 minutes, stirring occasionally.
  • 6 stir in parmesan cheese.
  • 7 garnish each bowl with mozzarella cheese.
  • 8 makes 6 to 8 servings.
