Lickety Split Lasagna Soup

Ingredients

- 1 lb ground beef
- 1 green bell pepper, chopped
- 3 garlic cloves, minced
- 1 medium onion, chopped
- 2 (14 1/2 ounce) cans diced tomatoes
- 1 (15 ounce) can tomato sauce
- 32 ounces chicken broth
- 1 tablespoon brown sugar
- 2 teaspoons italian seasoning
- 1/2 teaspoon salt
- 1 teaspoon dried thyme
- 2 cups lasagna noodles, broken
- 1/4 cup parmesan cheese, grated
- 1 1/2 cups mozzarella cheese, finely shredded
Recipe
- 1 brown ground beef, green pepper, and garlic cloves in dutch oven or stock pot; drain.
- 2 add onion, diced tomatoes, and tomato sauce.
- 3 stir in chicken broth, brown sugar, italian seasoning, salt, and thyme.
- 4 bring to a boil; add lasagna noodles.
- 5 reduce heat and simmer for 20 minutes, stirring occasionally.
- 6 stir in parmesan cheese.
- 7 garnish each bowl with mozzarella cheese.
- 8 makes 6 to 8 servings.
