Papa Gouras's Lemon Chicken

- 1 cup beef stock
- 3 tablespoons shallots, minced
- 3 tablespoons fresh lemon juice
- 1/2 teaspoon salt
- 10 tablespoons unsalted butter, softened

- 6 boneless skinless chicken breasts (6 oz. each)
