French Onion Soup

Ingredients
- 6 medium onions, thinly sliced
- 1 tablespoon butter
- 2 tablespoons plain flour
- 6 cups beef stock
- 6 slices french bread (1cm thick)
- 1 cup grated gruyere cheese
- salt
- black pepper
Recipe
- 1 gently cook onions and butter in a large pan for about 30 minutes, stirring occasionally making sure they do not burn. the onions should be soft and a rich golden colour.
- 2 sprinkle in flour, stir well then add stock. stir until boiling, lower the heat and simmer gently for about 20 minutes.
- 3 place bread slices on a baking tray, bake in a moderate oven for about 10 minutes or until crisp.
- 4 season soup to taste with salt and black pepper and pour into a soup tureen or into indivual bowls.
- 5 top with bread slices, sprinkle with cheese and bake a further 10 minutes in a moderate oven.
