French Onion Soup

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • 6 medium onions, thinly sliced
  • 1 tablespoon butter
  • 2 tablespoons plain flour
  • 6 cups beef stock
  • 6 slices french bread (1cm thick)
  • 1 cup grated gruyere cheese
  • salt
  • black pepper

Recipe

  • 1 gently cook onions and butter in a large pan for about 30 minutes, stirring occasionally making sure they do not burn. the onions should be soft and a rich golden colour.
  • 2 sprinkle in flour, stir well then add stock. stir until boiling, lower the heat and simmer gently for about 20 minutes.
  • 3 place bread slices on a baking tray, bake in a moderate oven for about 10 minutes or until crisp.
  • 4 season soup to taste with salt and black pepper and pour into a soup tureen or into indivual bowls.
  • 5 top with bread slices, sprinkle with cheese and bake a further 10 minutes in a moderate oven.
