French Onion Soup

Total Time: 1 hr Preparation Time: 1 hr

Ingredients

  • Servings: 6
  • 6 medium sweet onions (i used 3)
  • 3 tablespoons butter
  • 2 bay leaves
  • 2 tablespoons fresh thyme leaves
  • salt and pepper
  • 1 cup dry wine (i used pinot grigio)
  • 1 quart beef stock
  • 2 tablespoons worcestershire sauce

Recipe

  • 1 caramelize onions in large soup pot with butter, bay leaves, thyme, salt and peper. stir frequently and let caramelize for about 40 minutes over meduim heat.
  • 2 deglazed pan with wine for a minute stirring constantly. add stock, worcestershire and salt and pepper to taste.
  • 3 simmer 15 minutes.
