French Onion Soup

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • 1/4 cup water
  • 1 medium yellow onion
  • 4 cups beef broth
  • 2 ounces part-skim mozzarella cheese
  • 4 tablespoons fat free croutons
  • 1 dash crushed red pepper flakes (optional)

Recipe

  • 1 in a medium sauce pan, add the 1/4 cup of water and bring to a boil.
  • 2 slice the onion into thin strips and add to the water. continue cooking until onions clarify.
  • 3 once the onions are clear, add 4 cups of beef broth. bring to a boil and then simmer for about 15 - 20 minutes.
  • 4 shred the mozzarella.
  • 5 once done, place two cups of soup into bowl, garnish with 1 ounce shredded mozzarella and 1 tablespoon croutons and the red pepper, if using. enjoy!
