French Onion Soup

Ingredients

  • Servings: 6
  • 1 cup yellow onion, sliced
  • 1 cup red onion, sliced
  • 2 (14 ounce) cans beef broth
  • 1 (14 ounce) can chicken broth
  • 6 buttermilk biscuits
  • 1 (16 ounce) package mozzarella cheese
  • 1/4 cup shredded parmesan cheese
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 2 teaspoons black pepper
  • 3 teaspoons marsala wine
  • 2 teaspoons parsley (for garnish)

Recipe

  • 1 wash off onions and cut into ½ - 1 inch squares.
  • 2 sautee onions in sauce pan on medium low heat.
  • 3 add in salt and pepper.
  • 4 combine beef/chicken broth into pan with onions. put on medium heat for 15 minutes and add marsala wine.
  • 5 reduce heat to medium low.
  • 6 meanwhile preheat oven to 450 degrees. place biscuits on a greased backing sheet and place in oven for 8-10 minutes.
  • 7 when biscuits are done remove from oven and set on cooling rack.
  • 8 get small oven safe 6-8 ounce soup bowl and pour broth and onions halfway up.
  • 9 cut biscuits into 4 pieces and place on top of onions and broth.
  • 10 cut half centimeter slice of mozzarella cheese and place over biscuit.
  • 11 sprinkle a pinch of parsley over top cheese and place in oven on 250 degrees fahrenheit until cheese is melted and slightly golden brown for about 5-10 minutes.
  • 12 remove from oven and let cool for 5 minutes then serve.
  • 13 enjoy!
